Coriander Pulao
Monday, July 14, 2008I always thought coriander was only used for garnishing & used in chutneys. I had never thought that one could use coriander as a main ingredient until I saw Rekha's Coriander Rice. The dish looked so yummy that I was tempted to try it instantly & I made Coriander Pulao for lunch. It turned out to be super delicious. My mother loved it too. The amazing aroma of coriander pierces your nose making you crave for it
Thanks Rekha for sharing the recipe. I have made slight changes to suit my taste.
Here it is:
Preparation Time: 30 Mins
Ingredients:
- 1 cup Basmati Rice - Washed & saoked in water for 15 mins
- 1 onion - 1/2 onion for grinding & chop the remaing half & keep aside
- 1 large punch of cilantro/coriander leaves
- Curry leaves
- 2 green chillies - low/medium spiced
- A small piece of ginger
- 2 garlic pods
- Cinnamon - 1 stick
- Cardamom - 2
- khus-Khus - 1 tsp
- 4 -5 peppercorns
- 1 clove
- Cumin seeds
- Bay leaves - 2-3
- Salt as per taste
- Oil
- Cashewnuts for garnishing
- 2 tsp lime juice
Method:
- Grind together Green chillies, Half onion, Khus-Khus, Cinnamon stick, Clove, Ginger, Garlic Pods, Curry leaves, large bunch of coriander leaves, peppercorns, cardomon into a smooth paste by adding little water
- Take a pressure cooker, add oil
- Add cumin seeds, once it splutters, add bay leaves
- Add chopped onions
- Saute till onion turns transparent
- Now add the ground paste & saute till oil separates & the raw smell of the paste disappears
- Add Basmati rice & saute for 1 min
- Add 1 1/4 cups of water NOTE: This does not need too much water since there are no other vegetables added.
- Add salt as per taste
- Close the lid of the pressure cooker & let it cook
- Open the lid once the pressure is released.
- Add 2 tsp lime juice & mix well
- Garnish with Cashewnuts & coriander leaves
Serve HOT with onion raita .. Enjoi !!!!
