Sesame Seeds are an indispensable part of Indian Winters. Sesame seeds are known to generate heat & has numerous health benefits when eaten in small quantities.
It is a good idea to include to bit of sesame seeds into your daily diet. Sesame is loaded with Vitamin E & has anti ageing properties.
Since there was no Ellu Bella this year's Sankranti, I made it up with these Sesame Chikki also known as Til Patti in the north
Sesame Chikki is a super simple recipe that requires only 2 ingredients. Sesame seeds & Sugar. You could also make this with Jaggery but I wanted to try this with sugar since I always make Sesame Laddoos using Jaggery
You Will Need:
- 1 cup White Sesame Seeds
- 3/4 cup Sugar
How To:
In a heavy bottomed pan, roast Sesame Seeds on low flame for about a couple of minutes, stirring continuously
It should slightly change color & splutter. Turn off the flame & transfer onto a plate
In the same pan, caramelize sugar on low flame. It will take about 15 minutes for the sugar to melt. But make sure that you do this on low flame so that the sugar does not burn
Once the sugar has melted completely, add the toasted sesame seeds & mix well.
Immediately transfer the mixture onto a greased rolling board & while the mixture is still hot, sprinkle some water on top & roll the mixture into a square of 2 inch thickness
Cut into squares using a knife or a pizza cutter. Allow it to cool completely. it should take about 30 minutes. Break into squares & store in an air tight jar
