Crunchy Peanut Masala

We are a Peanut loving family. Especially the kid & the husband. Kedar is always fishing out for roasted peanuts in Poha, Lemon Rice or other dishes where it gets added. Give him a small bowl of roasted peanuts & he's happy :) While, the husband often snacks on raw peanuts, I like them boiled or roasted. I always keep a box of roasted & salted peanuts handy. They are great to munch on with Tea/Coffee, or add them to Salads.
Peanut Masala in Bangalore is usually made with Congress Kadlekai - A spiced up version of roasted peanuts. But I've used plain roasted & salted peanuts here.
The husband makes a very mean Peanut Masala & he was the one who first taught me how to make this. His version is slightly different though. A few months ago, I made a big batch of these to take to an impromptu Potluck & everyone, including the kids loved it. Hence, documenting it here :)
- 1 cup Peanuts *
- 1 medium sized Red Onion - Finely Chopped
- 1 large Tomato - chopped
- 2 tablespoon grated Carrots
- 1 teaspoon Tamarind Chutney **
- 1 teaspoon Green Chutney **
- 1 green chilli - finely chopped (Optional)
- Fresh chopped Coriander for Garnish
How To:
In a large mixing bowl, Add all the ingredients except coriander. Mix well & garnish with chopped coriander & serve immediately

-- * The key to a good Peanut Masala are Super crunchy Peanuts. Peanuts need be roasted, Salted, deskinned & split. I buy ready to eat roasted & salted Peanuts from Costco or from here. They are super crunchy & taste great. You can make your own roasted peanuts too.
-- ** I buy bottled ready to use Chutneys. But fresh home made Green Chutney is always better in taste.
-- I like that heat from the green chilli but I don't add it if I am making it to serve kids.
