Indian Style Atta Crackers

We are already one week into 2020 but better late than never, Wishing you all a very Happy New Year!! And, I am here with a new post.
There used to be a time when I used to really look forward to my 5 PM Chai Time .. A hot cup of Ginger Tea & something savory to much on. Currently, We are in a phase where all the fancy habits are thrown out of the window. Now, our evening Chai is anytime between 5 - 7 PM :)
We all get a bit hungry by tea time don't we? How easy it is to reach out for that pack of chips or cookies isn't it? If you are looking out for something easy, homemade & healthy then, these Atta Crackers are a good option
You Will Need:
- 2 cups Whole Wheat Flour/Atta
- 1/4 cup All Purpose Flour
- 1/2 teaspoon baking soda
- 1/3 cup extra virgin olive oil
- A sprig of Curry Leaves finely chopped
- 4-5 green chilies (deseeded & finely chopped)
- Salt as per taste
- Sesame Seeds for topping (optional)
How To:
In a large bowl, combine whole wheat flour, all purpose flour, baking soda, curry leaves, green chilies & salt
Add Olive Oil, stir well. Gradually add water & knead to form a soft pliable dough. Cover it with a damp kitchen towel & let it rest for 15-20 minutes
Preheat the oven to 180 C/350 F. Dust the surface you want to work on with flour Divide the dough into sections & roll them quite thin (The thinner you roll, the crispier the crackers get)
Use a pizza cutter to cut them into diamonds/squares & transfer them onto a baking tray lined with parchment paper
Lightly brush each cracker with olive oil & sprinkle sesame seeds
Bake for 8-10 minutes until lightly browned. Rotate the tray have way through for even baking. thicker crackers take slightly longer to bake. Keep an eye on the crackers while they are baking as the oven temperatures/time may vary
Allow the crackers to cool & transfer them into an airtight jar & enjoy them with your Cuppa !!
