Prune & Almond Energy Balls

Here's a quick 10 minute Prune & Almond Energy Balls. Honestly, this recipe came about because there was a packet of prunes sitting in the pantry for a really long time that nobody wanted to eat & I didn't know how to use them up.

I have seen a lot of Energy Balls recipes that use Dates & I swapped it with Prunes. And, I am really glad I made these because my daughter loved them 

Prune & Almond Energy Balls  

Makes around 20-22 Balls using Standard Measuring Cups 

You Will Need:

  • Roughly about 2.5 cups of chopped Prunes
  • 1 cup Almonds 
  • 1/2 cup Semi Sweet Chocolate Chips  
  • 1.5 tablespoons of Edible Coconut Oil 
  • 1/2 teaspoon Vanilla Extract 
  • 2 tsp Honey or Maple Syrup  (if you want it sweeter) 
  • Desiccated Coconut Powder to coat them with
How To:

Chop the Prunes into small Pieces 

In a Mixer/Blender, Add almonds & powder it 

Add in Prunes & coconut Oil & blend again until it forms a coarse paste. About 3-4 whizzes should be enough 

Melt the Chocolate Chips in a microwave safe bowl. About a minute should be enough 

Scoop the mixture out onto a bowl, Add the melted chocolate chips, Vanilla Extract & check for sweetness. 

If you want it sweeter, add Honey or Maple syrup accordingly. I did not add any because the sweetenes of the chocolate chips was quite enough for us 

Mix everything together & shape them into Balls. I got about 22 Energy Balls 

Roll them on a bed of desiccated coconut powder so that it gets coated evenly & Done !! 

These stay pretty soft & you may want to refrigerate them to slightly firm them up

NOTE:

This is a very easy recipe & there are no exact measurements that you need to use. You can swap almonds with any other nuts you like 

I added Chocolate Chips because Prunes are not as sweet tasting as Dates so I wanted to balance the sweetness & I also wanted to make it tastier for the kids
