I am not very good at making a lot of sweets & especially at making Burfis that need to be cooked until it reaches a certain consistency 

But making Katlis is a whole different ball game. You don't need the sugar to reach a 1 or a 2 string consistency so it is pretty much easy

Costco's Almond Flour makes Katli Making a 10-15 minute job .. I've been making these quite regularly as my kids seem to like them too.

Also, the amount of Ghee used here is almost negligible, making this a somewhat healthy-ish Sweet in comparison to others

Here is a quick video to help you see the right consistency of the dough. This is a fairly simple recipe that beginners can attempt too 



You Will Need:

  • 2 cups of Almond Flour  (I've used Costco Almond Flour)
  • 1 cup Sugar 
  • 1/2 cup Water 
  • 1 tablespoon Ghee 
  • 1/4 teaspoon Cardamom powder
  • A few strands of Saffron 
Method:

In a wide sauté pan, add water, Sugar & Ghee & mix well to combine. Once the mixture comes to a boil, immediately add the almond flour, Saffron  & cardamom powder & mix well to combine 

Keep sautéing until it comes together into a dough. This should take 3-4 minutes to cook

Switch off the heat & let it cool down a bit. Once warm enough to handle, grease your palms with ghee & gently knead the dough on the kitchen counter, for a couple of minutes 

Place the dough in-between 2 parchment papers & roll using a rolling pin. The thickness should be around 1/2 an inch

Trim the edges & cut into diamonds or squares .. The Katlis will firm up even more after a couple of hours 

Store in an air tight container
