Empty Salna | Plain Salna | MT Salna

Empty Salna or Plain Salna or MT Salna is a plain gravy originating from the City of Madurai. It is usually served as an accompaniment with Parottas, Idli, Dosae/Dosai, Idiyappam, Jeera Rice or Biryani
This Gravy uses only Onions & Tomatoes along with an array of Spices. Since, it does not have any other vegetables in it, it is called Empty Salna
Though this is very popular in roadside Eateries/Carts, It is also served in South Indian Restuarants as well usually with Ghee Rice/Jeera Rice, Biryani,Parotta.
I served this with Cabbage Pulao. As this Pulao was mildly flavored, it paired well with the Spicy Salna
Serves 4
You Will Need:
- 1 big Onion - Finely Chopped
- 2 Big Tomatoes - Roughly chopped
- 1 tablespoon Oil
- Salt as per Taste
- A handful of fresh Coriander
Spices Needed:
- 1 tsp Cumin Seeds
- 1 teaspoon Fennel Seeds
- A small stick of Cinnamon
- 4 Cloves
- 1 Bay Leaf
- 3/4th teaspoon Red Chilli powder
- 1/4 teaspoon Turmeric Powder
- 1/2 teaspoon Kitchen King Masala
- 1/2 teaspoon Garam Masala
To Be Ground into a Paste:
- 2 tablespoon Grated Coconut
- A small Piece of Ginger
- 4 Cloves of Garlic
- 1 teaspoon Poppy Seeds/Khus khus
- 1 tablespoon Cashewnuts
Method:
In a Pressure Cooker, Heat some oil, once hot, splutter Cumin seeds & Fennel Seeds. Add Cinnamon, Cloves & Bay Leaf & sauté for 20 seconds
Add the onions & turmeric & sauté for a minute. Next, Add the Tomatoes, Red Chili Powder, Garam Masala, Kitchen King Masala & Sauté for 3-4 minutes. Add chopped coriander as well.
Meanwhile, Grind the Ingredients mentioned in the list into a fine Paste
Add this paste into the Onion-Tomato mixture. Add 1 - 1.5 cups of water & some salt & pressure cook for 1 whistle
