Vegetable Saagu - Karnataka Style

Vegetable Saagu

Serves 4 

Ingredients:

  • 1/2 cup Chopped Green Beans
  • 1 small Carrot - Diced 
  • 1 large Potato - Diced 
  • 1/4 Cup Green Peas (I've used Frozen)
  • Half of a Small Radish - Peeled & Diced - Optional 
  • Salt 
  • 1 tablespoon Cooking Oil
  • 1 teaspoon Cumin seeds 
To Grind:

  • 1/4 cup grated Coconut 
  • 4 Green Chilies 
  • A small Piece of Ginger 
  • 3 Garlic Pods 
  • 2 inch stick of Cinnamon
  • 3 Cloves 
  • 1 teaspoon Poppy Seeds
  • 2 Green Cardamon (1/2 teaspoon Cardamom Powder)
  • 1 tablespoon Roasted Gram 
  • 10 Cashewnuts - Optional 
  • 5-6 Mint Leaves 
  • A handful of Coriander Leaves & Stalks
Method:

Clean & dice all the vegetable. In a Pressure cooker, Add all the vegetables except Green Peas. 

Add Half a cup of water & Pressure Cook for 1 whistle. After 1 whistle, Release the pressure by keeping the pressure cooker under running water.

Drain the water & set aside for later use.

Grind all the ingredients mentioned in the list into a smooth paste

In a heavy bottomed pan, heat 1 tablespoon oil & splutter cumin seeds

Add all the cooked Vegetables & the ground paste & mix well. Add salt & the reserved water & mix well

Add additional 1 cup of water to form a gravy & let it come to a boil

Reduce the heat & simmer on low flame for 5 minutes. 

Serve with Puris/Chapatis/Rave Idli
