Vegetable Saagu - Karnataka Style

- 1/2 cup Chopped Green Beans
- 1 small Carrot - Diced
- 1 large Potato - Diced
- 1/4 Cup Green Peas (I've used Frozen)
- Half of a Small Radish - Peeled & Diced - Optional
- Salt
- 1 tablespoon Cooking Oil
- 1 teaspoon Cumin seeds
To Grind:
- 1/4 cup grated Coconut
- 4 Green Chilies
- A small Piece of Ginger
- 3 Garlic Pods
- 2 inch stick of Cinnamon
- 3 Cloves
- 1 teaspoon Poppy Seeds
- 2 Green Cardamon (1/2 teaspoon Cardamom Powder)
- 1 tablespoon Roasted Gram
- 10 Cashewnuts - Optional
- 5-6 Mint Leaves
- A handful of Coriander Leaves & Stalks
Method:
Clean & dice all the vegetable. In a Pressure cooker, Add all the vegetables except Green Peas.
Add Half a cup of water & Pressure Cook for 1 whistle. After 1 whistle, Release the pressure by keeping the pressure cooker under running water.
Drain the water & set aside for later use.
Grind all the ingredients mentioned in the list into a smooth paste
In a heavy bottomed pan, heat 1 tablespoon oil & splutter cumin seeds
Add all the cooked Vegetables & the ground paste & mix well. Add salt & the reserved water & mix well
Add additional 1 cup of water to form a gravy & let it come to a boil
Reduce the heat & simmer on low flame for 5 minutes.
Serve with Puris/Chapatis/Rave Idli
